MINI-REVIEW
Guadalajara is part of the growing trend of Mexican restaurants that bring recipes from the interior of Mexico rather than purposely "Americanizing" them, and I applaud them for it. The original Guadalajara is in Cheyenne, and this branch serves the same kind of food from the owners' home town of Guadalajara, Mexico.

Most of the food is pretty mild (for Northwestern tastes, I suppose), but a few items will satisfy the serious chile lover. There is the appropriate warning on the menu, and even the supposed "dangerous" chile does not approach the spice level found along the border, but food from the interior of Mexico, after which this restaurant is patterened, is not as spicy to begin with.

Like most Mexican restaurants in the U.S., this one does not quite have the flavor that would be found south of the border, but Guadalajara is one of the better efforts, and is quite enjoyable.
